Classic Potato Salad

It's potato salad just as you know it, except this one is void of the things that aren't good for you


300g Desire Potatoes

250g Block Silken Tofu

1 Red Capsicum Diced

1 Bunch Dill

1 Lemon Juice

1 1/2 Tablespoons Whole Grain Mustard

Pinch of Salt and Peppe


Don’t be afraid to add some of your (healthy) ingredients, like sun-dried tomatoes or gherkins.


  1. Cut potatoes into bite size pieces and place in a large pot, fill the pot with enough water to cover the potatoes, place on the stove and bring to boil.

  2. In a jug or small bowl add the silken tofu, lemon juice, mustard, salt and pepper. Using a mixer or whisk, blend the ingredients together until well mixed.

  3. Once the potatoes a just cooked all the way through, remove from heat and drain. Place in a large bowl and add the capsicum and the tofu mayonnaise roughly chop the dill and add to the bowl and mix all the ingredients together until all the potato is covered. Place in the fridge to allow to cool.
